For some reason the various WC custom post types (orders, products, etc) don’t show as available post types in BB setup. Interestingly they do show up in PODS. How do I enable the WC post types to show in BB options?

You can see the “Products” post type in your screenshot (third from top). WooCommerce Orders won’t be available in the list as it isn’t a post type you can edit, it’s only available in the backend and used by WooCommerce for all orders. This means that even if Orders appeared in the list, you wouldn’t be able to do anything anyway. 
I believe they appear in Pods because Pods includes functionality to add/edit post types.
