Is there a way to adjust the row height to a specific height? The only two options I see are a) Default and b) full height. Default is too low for me, and full height is too high. I was trying to fix it by inserting an empty row within the row, but after publishing it is low again…

Yes, you’ll want to add a single column row which places a column into the row. It can be empty no problem. From there, access the row settings and adjust the top/bottom padding to expand the row height. You may need to try a few different values until you find what works best for your row.
