I’m reading the documentation on the plugin, specifically for the callout element. As I’m editing these little boxes, I see that my options are completely lacking the ‘layout’ section, so I can’t select anything other than ‘stacked’.

Not sure what you mean by Layout option. As the Beaver Builder Callout module has no such option. Therefore, it is likely you’re using a third-party Callout module.
