Is it possible to have different header text for each page because as far as I can tell I can only have the same for all pages.
Main page should have e.g. “My Home page” and then the contact page should have a header text of “Get intouch” and so on.
Hope it makes sense and it’s possible to do via the CMS.

Not really sure what you meant by Header Text. Do you mind sending in the URL of the site so we can check? Or maybe just a screenshot?

That is actually your logo. Unfortunately, you can’t have different logos per page on most themes, not just ours. You could try searching on Google for ways on how to do that. You can use the keywords ‘different logo per page wordpress’.
